Urban Bakers is a discursive baking program by Kök Projekt that aims to raise awareness of artisan bread production within the urban context of Istanbul. Working with the external wood oven, originally produced for Futurefarmers’ Kneading Together gathering in June 2016 at SALT Galata, for each event Kök Projekt invites three bakers to produce and discuss their interest and relationship to sourdough.

Each baker will introduce their personal bread making techniques and recipes, describe the importance of independent bread production in an urban setting, while preparing their sourdough breads in the oven. Anyone is welcome to participate in the conversation and taste the finished products.

The first event takes place on November 19 from 14.00 - 17.00 on the terrace of Neolokal at SALT Galata, with invited bakers Sinan Büdeyri (Nino Bakery), Sandy Sarpaş (Naan Bakery) and Murat Demirtaş (Fırınımdan Ekmekler).


About Futurefarmers and Seed Journey
In September 2016 Futurefarmers embarked on Seed Journey, a seafaring voyage upon an 1895 Colin Archer sailboat that returns ancient grains to their “center of origin.” Seed Journey departed from Oslo and will culminate in a boat carrying heirloom seeds to Istanbul in fall 2017. During this long, emblematic project Futurefarmers will host workshops, engage with local communities and create opportunities to consider together the interrelationship of food production to realms of knowledge sharing, cultural production, socio-political formations and everyday life.

Futurefarmers modified a bread oven as a component of Seed Journey in June 2016 which was installed on the terrace of Neolokal at SALT Galata. In collaboration with Neolokal the oven can act as a pivotal space for people to come together, to discover or expand their interest in baking, and to embed larger discussions around the practice and metaphor of baking, issues of seed heritage, as well as food production, in this locality.
